Parmesan Baked Halibut

It just so happens we have a custom recipe for this cut. Please feel free to use it and take all the credit!

Our Alaskan wild Pacific halibut fillet is cut into 2.5 lb. fillets. Halibut is a thick, white fish that is firm but tender.  Halibut is a very lean fish and will tend to dry out if overcooked.   However, cooked correctly, this halibut will be tender and flakey with a mild, sweet flavor fresh from the sea.
