When you buy french trimmed rack of lamb from Porter & York, you’re getting well cared for animal meat that’s succulent. A lamb rib rack consists of 7 or 8 bones and the eye of the rib. The term “eye of the rib” refers to the tender loin meat attached. The term “frenched” refers to how the butcher cuts the meat and exposes the rib bones down to the eye of the rib. In beef terms, this is the prime rib of lamb. Our lamb is USDA Choice grown and processed in the U.S.A.
