Porter & York’s Flank Steak is aged 28 days for a full beef flavor.  Our butchers hand-cut, trim and fully clean your steaks the day we ship them to you.  It is best when marinaded, grilled, and sliced thin against the grain.

Flank steak is a relatively long and flat cut.  It consists of a well-defined “grain” of long muscle fibers.  These fibers must be broken down in order to make it tender, so it should always be cut into thin strips against the grain before eating.

Our butchers fully trim the surface fat and “silver skin” so it’s ready to cook right out of the package.

Flank steak can be grilled, pan-fried, broiled, or braised.  It takes marinades very well and holds great amounts of flavor.  As a result, it is used in a variety of dishes including London broil and as an alternative to traditional skirt steak in fajitas.

Marbling and Tenderness

The amount of fat in meat is known as marbling. Prime beef and the best cuts of Choice beef have the most marbling. Our butchers intentionally select these cuts because we feel they have the ideal amount of marbling, giving them a perfect balance of flavor and tenderness.

Delivered to Your Door Fresh - Never Frozen

Freezing and thawing compromises the flavor and tenderness of meat. So, unlike the other steak delivery guys, we made it our mission to deliver all our beef fresh, so it is never frozen at any point in the process. Your order is cut fresh the day it ships, individually vacuum sealed, and meticulously packed in a double-insulated box with gel packs, keeping your meat at refrigerator temperatures throughout its journey.
